SWEET POTATO AND ALMOND CAKE RECIPE
Every now and then here in the editorial office we enjoy experimenting with new recipes, both sweet and savory, and the potato and almond cake, among all of them, is the one that has generated the most surprise and amazement. And do you know why? Because of its magic ingredient: the potatoes, capable of making this cake really soft. With a strong flavour thanks to the presence of almonds, you can't imagine the lemon scent that potato cake exudes. It went out of stock here in the editorial office in no time: it's truly impossible to resist, and we're sure your potato and almond cake won't stay in the kitchen for long either.

Potato and almond cake recipe
But enough chit chat, let's see together, step by step, how to prepare this Dolce wonderful:
INGREDIENTS (for 6-8 people)
- 700 grams of potatoes
- 130 grams of sugar
- 70 gr of almonds
- 30 g butter
- Sale
- 1 lemon not treated
- 5 eggs
- Bread crumbs
- Icing sugar
Preparation
- Peel and cut the potatoes into cubes, proceed with the steaming for about 15 minutes after it comes to a boil. Once they're soft, mash them with a potato masher and transfer them to a large bowl.
- Blend the almonds Mix with the sugar until you obtain a fine flour, then add it to the potatoes. Add the melted butter, a pinch of salt, and the grated lemon zest.
- Mix and knead with an electric whisk at medium speed, adding one egg at a time, until the mixture is well combined.
- Butter and sprinkle Pour the batter into a 24 cm diameter springform pan with the breadcrumbs. Bake at 180°C for about an hour. Let the cake cool completely before serving. Decorate with a pinch of cinnamon, if desired. icing sugar.

- As an alternative to almonds, use the nights
- For a stronger flavour, add 10 ml of rum and a teaspoon of vanilla powder to the mixture.
