ZUCCHINI AND CHOCOLATE CAKE RECIPE

We are used to considering vegetables as "salty" and fruit as "sweet": we recognize this classification as having a specific place in the kitchen, without reflecting that sometimes the flavors are not so defined. Vegan cakes therefore require soft, moist, and slightly binding ingredients to replace eggs, and in this case, we used zucchini. Their delicate flavor hides perfectly in the chocolate.

Vegan Chocolate and Zucchini Cake Recipe

Let's see, step by step, how prepare this delicious cake.

Ingredients

  • 3 medium-sized courgettes
  • 150 grams of flour
  • 125 grams of sugar
  • 1 glass of vegetable milk + a little extra
  • 1 tablespoon rice starch
  • 1 handful of hazelnuts
  • 3 tablespoons of unsweetened cocoa
  • ½ glass of corn oil
  • ½ sachet of instant baking powder

Preparation

  • You can prepare this cake directly in the blender or mixer, it will be done very quickly.
  • Clean the courgettes, transfer them to the blender and chop them.

  • Add the hazelnuts and chop them, then the milk, oil and sugar.

  • Add the flour, rice starch, cocoa and, finally, the yeast.

  • Blend and mix everything together.
  • As always, if the dough is too firm, soften it with a few sips of milk.
  • Preheat the oven to 180°C.
  • Pour the mixture into a lightly greased, table-top cake pan.
  • Bake for at least 45 minutes, then check with a toothpick that the inside of the cake is cooked.

  • Turn off the oven, leave the cake inside for a few more minutes, then take it out.

An advice

For a taste richer and intense you can dissolve 150 gr di dark chocolate in a bain-marie and pour it over the cake before serving.
