Flourless Carrot and Almond Cake Recipe

A dessert with a strong flavour, with carrots and almonds, gluten free Perfect for breakfast or a snack for the whole family, this easy-to-make cake pairs well with a healthy glass of orange juice or a delicious fruit and vegetable smoothie.

ALMOND AND CARROT CAKE

To make this gluten-free cake, we recommend using only products with the celiac-friendly logo to avoid problems for those with gluten intolerances. Here's what you'll need:

Ingredients

  • 250 g of rice flour
  • 250 gr carrots
  • 3 eggs
  • 100 gr almonds without skin
  • 50 ml of sunflower seed oil
  • 150 gr of brown sugar
  • A pinch of salt
  • The grated peel of half a lemon
  • A sachet of baking powder

Preparation

  • Grate the lemon zest and place it together with the rice flour in a bowl.
  • Grate the carrots without the peel and mix them with the flour and lemon.
  • In another bowl, whisk the eggs with the sugar, then pour in the oil, continuing to mix, and a pinch of salt.
  • Now combine the flour with the carrots and the lemon zest, continuing to mix the ingredients. Finally, add the yeast until the mixture is smooth.
  • Take the almonds and chop them coarsely in the mixer.
  • Line a baking tray with baking paper and pour in the mixture, arranging the chopped almonds on the surface.
  • Bake for 40 minutes at 160°.
  • Before taking the cake out, test with a toothpick; if it comes out clean, continue cooking for another 5 minutes.
