Ingredients

  • 250 g cheese
  • 50 grams of sugar
  • 80 g butter
  • 300g of crumbled biscuits mixed with cereals
  • 150 g of coconut flour
  • 100 g of coconut flour

Preparation

  • Crumble the biscuits well passing them through the mixer.
  • MixIn a bowl, combine the sugar, coconut flour, and crushed biscuits. Add the ricotta and softened butter.
  • Using a teaspoon, form little balls. and roll them in coconut flour. If you prefer a different praline coating, use cocoa, grated chocolate, or other nut flour.
  • Arrange the balls on a serving plate and keep them in the refrigerator for about 2 hours.

How to make vegan coconut bonbons

Ingredients

(for about 40 sweets)

  • 150 gr semolina
  • ½ l of rice milk
  • 60 gr of brown sugar
  • 2 cardamom pods
  • 50 g of raisins
  • 50 g of chopped almonds

Preparation

  • Soak the raisins in a cup of warm water for about 15 minutes.
  • Pour the rice milk in a pot, add the brown sugar and bring to a boil. Reduce the heat to low and slowly add the semolina and the cardamom seeds (open the capsule containing them and remove the seeds with the tip of a knife). Whisk until the mixture thickens (about 10 minutes), then, just before turning off the heat, stir in the almonds, drained raisins, and 2/3 of the grated coconut, until all the ingredients are thoroughly combined.
  • Let it cool for about 15 minutes, stirring occasionally with a spoon to facilitate cooling.
