MARGHERITA CAKE RECIPE

Although it features a very simple dough, Margherita cake preparation requires meticulous attention to detail to achieve a perfect and, above all, inviting result. Baking in a convection oven and choosing a pan measuring approximately 20-22 cm are key . This classic grandmother 's dessert will win everyone over with its time-honored, authentic flavor. Ingredients

  • 150 grams of flour
  • 150 gr of starch
  • 150 grams of sugar
  • 1 tablespoon of powdered sugar
  • 75 g butter
  • 150 ml of milk
  • 5 eggs
  • 1 packet of yeast
  • The grated peel of a lemon

Preparation

Grate the lemon zest and sift it together with the starch, flour, and baking powder.

– After leaving the eggs at room temperature for a while , separate the egg whites from the yolks, beat the egg whites until stiff with a spoonful of icing sugar and set them aside.

In a bowl or in a food processor, beat the egg yolks and sugar until smooth and fluffy (the more you beat the egg yolks and sugar, the better the result). Add the butter to the egg yolk and sugar mixture and continue beating. Once the butter is fully incorporated, add the room temperature milk.

Add the sifted flour, baking powder, starch, and lemon zest. Once all the ingredients are combined, take a wooden spoon and fold in the egg whites, being careful to do so gently to avoid deflating them.

Line the pan with parchment paper and pour in the batter. Bake in a preheated convection oven at 160°C (320°F) for about an hour (baking at a lower temperature than usual encourages the cake to rise and cook properly). After 45 minutes, check for doneness with a toothpick.
