How to prepare boiled meatballs

- 500g of boiled meat
- 300g of stale bread
- 500 ml of milk
- 1 parsley
- 1 clove of garlic
- Zest of ½ organic lemon
- 10 tablespoons grated Parmesan cheese
- 3 eggs

Preparation
- Place the stale bread in a bowl and cover it with milk: leave to soak for about 10 minutes.
- Finely chop the boiled meat, squeeze the milk from the bread, transfer it to a saucepan and cook until the mixture becomes firm and sticky.
- Transfer the “cooked” bread into a bowl, let it cool slightly and add the boiled meat, the eggs, a chopped parsley e garlic, the grated or very finely chopped lemon zest, and the Parmesan cheese. Season with salt.
- Mix the ingredients well until smooth and form the meatballs. Pour the breadcrumbs onto a plate and roll the meatballs in them. Meatballs.
