SPINACH MEATBALLS RECIPE

Ingredients
- 1 kg of spinach
- 2 eggs
- 1 teaspoon marjoram
- 2 tablespoons grated Parmesan cheese
- chickpea flour
- 2 shallots
- 3 tablespoons of oil and salt
Preparation
- Stew the spinach in a sauce of chopped shallots and marjoram, season with salt and cook over medium heat until the leaves are quite dry.
- Let it cool and then blend the spinach in a blender, adding a tablespoon of oil, the Parmesan cheese, and the eggs. Compact the mixture a little using the chickpea flour and then make the meatballs.
- Roll the meatballs in flour and place them on a baking sheet brushed with a drizzle of oil. Bake at 190°C (375°F) for 15-20 minutes, turning occasionally.
- Serve the meatballs accompanied with the mayonnaise homemade or with a delicious chili sauce or a sun-dried tomato cream homemade.
