Preparation

  • To begin, heat the milk with the honey and dissolve the yeast. If using sourdough starter, proceed in the same way.
  • Soak the raisins in a glass of water, arrange the flour in a mound on a work surface, pour in the milk, honey, dissolved yeast, and oil. Knead the dough until smooth and homogeneous.
  • Let the dough rest until it doubles in size: it will vary depending on whether you used brewer's yeast or sourdough starter.
  • Once the necessary time has passed, divide the dough into three parts: one plain, one in which to incorporate the raisins and one in which to insert the chocolate chips.
  • Divide each dough into 4 rolls (12 in total) and then let them rise on the baking tray in the oven for about an hour.
  • Preheat the oven to 180°C and bake: fill the milk rolls according to your taste.
