BASIL SANDWICHES RECIPE

BASIL SANDWICHES
Here is a recipe that we found on Corriere.it to prepare some very tasty panini to the basilic:
INGREDIENTS (for 4 people)
- 500 gr of type 0 flour
- 30 g of brewer's yeast
- 1 teaspoon sugar
- 50 g of basil leaves
- 4 tablespoons of extra virgin olive oil
- 2 teaspoons of fine salt
Preparation
- After sifting through the flour, pour it into a fountain shape on the work surface and then place the salt, sugar, crumbled brewer's yeast and 3 dl of lukewarm water in the central cavity.
- Start kneading the ingredients with your fingers until the yeast is completely dissolved.
- Add two tablespoons of oil and work the dough pasta with both hands, then flatten it and sprinkle it with the cleaned, washed and coarsely chopped basil leaves.
- Still working traditional sourdough, form a ball and brush the surface with oil.
- Place the dough in a bowl greased with a little oil, cover it with cling film and then let it rise for about 30 minutes.
- After this time, work the dough a little more and then divide it into small round portions of about 40 grams each.
- Arrange the rolls on two baking sheets lined with waxed paper, brush them with the remaining oil, then cover them with cling film and let them rise for another 20 minutes.
- After this time, remove the film, sprinkle the rolls with two tablespoons of sifted flour and bake in a preheated oven at 200°C for 10 minutes, placing a bowl of hot water under the baking trays.
- Remove the bowl and cook for another 15 minutes, then remove the rolls from the oven and serve them lukewarm with a side of cold cuts or cheeses.
