MEATBALLS IN BROTH
A simple dish, easy to prepare, with a long history. And a very healthy one. We're talking about meatballs in broth, which can be cooked in just a few minutes before serving.

MEATBALLS IN BROTH RECIPE
Ingredients
The green part of 2 leeks or 4 spring onions
1 L of broth
1 handful of parsley
Rosemary
The zest of 1/2 lemon
1 glass of breadcrumbs
Grated cheese
1 Egg
1 knob of butter

Preparation
Chop Finely chop the leek or spring onion scraps, parsley, lemon zest and breadcrumbs (if the bread is very dry, you can soak it in water or milk and then squeeze it).
Mix In a bowl, mix the butter with a pinch of salt and the egg, add a handful of cheese and the chopped herbs and bread (if the mixture is not consistent, add more chopped breadcrumbs).
Obtained Form several small meatballs and cook them in the boiling broth for 5 minutes. Serve immediately, garnished with leek leaves or julienned spring onions.
