POTATO PARMIGIANA RECIPE
A simple dish the potato parmigiana, ideal for staying fit and healthy, without sacrificing taste. An excellent alternative to the classic Eggplant Parmesan, it is also perfect for lunch at the office and as an appetizer.

POTATO PARMIGIANA WITH BREAD CRUMBLE
A dish that meets everyone's taste, and which hides two secrets: it is versatile in filling and allows recover some leftovers left in the refrigerator.
INGREDIENTS (For 6 people)
- 800 grams of floury potatoes
- 1 egg
- ¼ liter of milk
- 1 tablespoon of cornstarch
- nutmeg
- ½ cup grated Parmigiano Reggiano
- 1 mozzarella
- 3 – 4 slices of cooked ham
- Stale bread, crumbled
Preparation time: 15 + 15 minutes
Cooking time: 20 minutes to cook the potatoes + 25 minutes in the oven
Preparation
- lavare well the potatoes leaving the peel, and make them boil in plenty of salted water.
- Meanwhile, prepare a béchamel sauce: dissolve the cornstarch in a small amount of the indicated milk, add the remaining milk, bring to the boil until the sauce thickens, and finally season with salt and nutmeg.
- Drain Once boiled, cool the potatoes quickly in cold water and peel them.
- Crush them well with the appropriate tool, or with the potato masher.
- Season them with the béchamel sauce, the egg and half the Parmesan; season with salt.
- Switch on the oven at 200°.
- In a suitable cake pan, deposit half of the potato mixture and level it.
- Stuff with slices of ham and diced mozzarella.
- Coprire with the remaining potatoes and finish the surface with the grated Parmesan and the stale bread well crumbled.
- Bake in the oven until the surface is golden brown and crispy.

The recipe can also be enriched with mushrooms. In addition to mushrooms, you can use vegetables already cooked or quickly sautéed in a pan, a few spoonfuls of meat sauce, Other sliced e cheese.
