- 120 grams of sugar
- 60 grams of flour
- 6 eggs

METHOD
- Heat the water in a saucepan and melt the butter and a pinch of salt. When it boils, add flour and stir vigorously. When the mixture comes away from the sides of the pan, turn off the heat and let it cool.
- Beat the eggs with the sugar and the grated lemon zest and once they are combined, add them to the water and flour mixture: you should obtain a smooth and homogeneous mixture.
- Heat the oil in a pan Once it's hot, pour in the mixture in walnut-sized spoonfuls. As soon as they puff up, immediately remove the cream puffs from the heat and let them cool on paper towels.
- Prepare the custard, Place it in a piping bag and fill the cream puffs from the bottom. Dust with cocoa or powdered sugar and serve.
