CHOCOLATE CREAM WITH GINGER RECIPE

Ingredients

  • 400 grams of dark chocolate
  • 4 yolks
  • 400 ml of fresh cream
  • 1 teaspoon fresh ginger
  • 3 whites
  • Dark chocolate chips to taste

Preparation

  • Roughly chop 400g of dark chocolate, place it in a pan in a bain-marie and cook over low heat, stirring often, until it becomes a smooth paste. cream smooth and homogeneous.
  • Remove the pan from the bain-marie, pour the chocolate into a bowl and let it cool, stirring occasionally.
  • Beat 4 egg yolks with 100 ml of cream cool until light and fluffy, add the melted chocolate, a teaspoon of finely grated fresh ginger and continue to whisk until the mixture is well combined.
  • Add the 3 egg whites and 300 ml of fresh cream, whipped with the whisk.
  • Transfer the resulting cream into several small bowls, cover with plastic wrap, and refrigerate for at least 3-4 hours. After this time, serve, garnishing the top with dark chocolate shavings.
