How to prepare citron salad

The salads of cedar They are an excellent solution to accompany any second course, whether fish or meat-based.

Here are the three tastiest: with mandarins, with fennel and with tuna. 

Ingredients

  • Half a cedar
  • 2 mandarins
  • A pinch of sugar
  • A few fresh mint leaves

Preparation

  • After peeling the cedar removing the external yellow part, cut the pulp into cubes or slices.
  • Similarly, peel the mandarins and then cut them into slices or cubes. 
  • Place everything on the plate, sprinkle the citrus fruits with a little sugar to sweeten the citron.
  • Add the leaves of mint and then let it rest in the refrigerator for about an hour.
  • This is the alternative that, instead, combines citron with tuna. 

Now let's see the one with tuna:

Ingredients

  • A can of tuna in brine
  • Half a cedar
  • 2 spring onions
  • Salt and pepper (to taste)

Preparation

  • Peel the citron and then cut it into very thin slices. 
  • Wash and then slice the spring onions. 
  • Arrange the citron slices on the bottom of the plate and then add the spring onions and tuna. 
  • Season with a few tablespoons of extra virgin olive oil and, according to your taste, add any aromatic herbs, olives and capers.

And this is the alternative with fennel:

Ingredients

  • A cedar
  • A fennel
  • A red onion
  • Green olives

Preparation

  • Cut the citron and fennel into cubes or strips
  • Slice the onion and then season everything with extra virgin olive oil and a pinch of salt. 
  • You can also add some olives to taste.
