PEPPERS WITH CRUMBS RECIPE

You can customize this recipe however you like by adding pine nuts e raisin, nuts, or other vegetables of your choice, the spices, which you prefer. The peppers in a pan with breadcrumbs are also delicious cold: to make the dish even tastier you can add some olives or capers, sweet onions and potatoes.

Ingredients

  • Un pepper per person based on the number of diners
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Breadcrumbs (also made from leftover stale bread)
  • Salt to taste

Preparation

  • Wash the peppers, clean them inside taking care to remove the seeds and filaments and cut them into not very large pieces.
  • Place them in a pan with two or three whole garlic cloves, add a little oil, salt and a few tablespoons of water.
  • Cook slowly over low heat and stir occasionally.
  • When they are wilted enough (there should be a little cream left) add two or three tablespoons of breadcrumbs, (if you have any leftover bread, put it in the oven until it becomes dry, let it cool and then blend it), mix with a spoon for a couple of minutes, until it is mixed with peppers.
  • Turn off the heat and serve the dish at the table.
