Homemade Carnival Chiacchiere

The secret is an orange and a lemon zest. And don't forget to add the powdered sugar at the end of cooking.

How to prepare Carnival chiacchiere

Also known as frappe in Emilia, lattughe in Lombardy, bugie in Piedmont, cròstoli in Trentino and galani in Veneto, Chiacchiere are a typical dessert of Carnival, much loved by children. Crumbly and tasty, thanks also to the addition of icing sugar, they can be either fried or baked.

Fried

To prepare crumbly Chiacchiere, the secret is to add 30 ml of sweet sparkling wine or rum to thedough.

Ingredients

  • 300 grams of flour
  • 60 grams of sugar
  • 50 g butter
  • 2 eggs
  • 30 ml of sweet sparkling wine
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • 2 teaspoons of yeast
  • A pinch of salt
  • Powdered sugar (as needed)
  • Sunflower oil for frying (alternatively, you can cook the chiacchiere in the oven)

Preparation

  • Grate the zest of orange and lemon.
  • Pour into a bowl, the flour, yeast, sugar, and grated citrus zest. Add a pinch of salt and arrange the mixture in a fountain shape. Then add the eggs, the softened butter cut into small pieces, and the sparkling wine (or rum).
  • Mix all the ingredients well until you obtain a smooth and homogeneous dough and then place everything in the refrigerator for at least 15 minutes.
  • After this time, roll out the dough with a rolling pin until it's thin enough and, using a pastry cutter, cut out strips about 3-10 cm wide. Using the pastry cutter, also make a cut in the center of each Chiacchiera.
  • Fill a pan with sunflower oil, heat the oil and then fry the Chiacchiere made in property until they start to swell and turn a nice amber color.

Baked

Line a baking tray with baking paper, arrange the chiacchiere, spacing them apart, and bake at 180°C for 15-20 minutes.
