How to make sweet ravioli with ricotta and cinnamon

Our grandmothers usually added a small glass of sambuca and chocolate chips to the ricotta cream. We can make our own ricotta cream using our favorite recipe. Let's see how:

Ingredients

  • 450 grams of flour
  • 3 eggs
  • 100 grams of sugar
  • 100 g butter
  • A teaspoon of baking soda
  • A small piece of grated citrus peel

Ingredients for the filling

  • 400 g cheese
  • ½ tablespoon of cinnamon
  • 100 grams of powdered sugar
  • Chocolate chips and a teaspoon of sambuca (according to your taste)
  • Icing sugar

Preparation

  • We prepare the dough for our ravioli by whisking the eggs with the sugar. We also add the softened butter, flour, baking soda and the zest of citrus fruits.
  • Mix until smooth and homogeneous and let it rest in the refrigerator. Meanwhile, prepare the cream.
  • To prepare the ricotta cream, mix all the ingredients in a bowl with an electric mixer or food processor until smooth and frothy.
  • Line a baking tray with baking paper and preheat the oven to 160 degrees.
  • Take the dough and roll it out with a rolling pin, dusted with a little flour. Use a pastry cutter or glass to create circles, and place a spoonful of cream in the center of each circle.
  • Fold the dough over itself and seal the edges well by pressing with the back of the prongs of a fork.
  • Bake in the oven at 160° for about 30 minutes or until the sweet ravioli are golden brown.
  • Alternatively, fry the ravioli in plenty of sunflower seed oil.
