How to prepare persimmon tart

Ingredients

(For the shortcrust pastry)

  • 300 g of flour (wholemeal flour is also available)
  • 100 grams of sugar
  • 1 egg and 1 yolk
  • 100 g butter
  • The grated zest of one lemon
  • A pinch of cinnamon
  • A pinch of fine salt
  • 1 teaspoon baking soda

(For the filling)

  • 4 ripe persimmons
  • 1 spoonful of water
  • 1 spoon of sugar

Preparation

  • To begin, prepare the pastry: grate the zest of Lemon; and sift it with flour and sugar.
  • Arrange the flour in a fountain shape, add the sugar and the zest, then the eggs, the soft butter cubes, the cinnamon, the salt, and the baking soda.
  • Mix the mixture and form a ball: wrap it in cling film and leave it to rest in the refrigerator for 15 minutes.
  • Now proceed with the filling: pour water and sugar into a saucepan, remove the peel from the persimmons and let them wilt in the sugar water until they become a puree.
  • Roll out the pastry, butter and flour a baking pan, arrange the shortcrust pastry on top, and then pour in the persimmon puree. Bake at 180°C (350°F) for about 20 minutes.
