How to make pea cappuccino

Il cappuccino of peas  It's a special creamy pea soup served with a froth (of milk or cream) on top, reminiscent of a cappuccino. It's simple, elegant, and perfect as an appetizer.

Ingredients for people 4

  • 200 grams of peas, shelled
  • 1 dl of very cold fresh cream
  • About half a glass of milk
  • 6 slices of bread
  • A few fresh mint leaves
  • Poppy seeds

Preparation

  • Break the sandwich bread, place it in a deep dish, add a dozen mint leaves, moisten everything with milk.

  • While the bread is softening, boil the peas or cook them in the microwave: either way, they'll only take a few minutes. Season lightly with salt.
  • Transfer the peas to a blender, along with the soaked, soft bread and mint. If there's any milk left at the bottom of the bowl, set it aside.

  • Blend everything until you obtain a soft and homogeneous cream, and if it is too thick, add a little of the leftover milkSeason with salt.

  • Whip the cream, without adding anything.
  • Divide the pea cream into four portions, decorate with a nice dollop of whipped cream and finish with a sprinkling of poppy seeds.
