CREAM OF PEA RECIPE

Either way, it's a light, flavorful, and fragrant dish. pea cream, in this simple and ancient recipe, is truly a special dish, even taking into account the many properties of peas. CREAM OF PEASES
In presenting this to you for successful corporate training, let's start by saying: the ideal is, obviously, to use fresh peas, but you can also get by with those out of season frozen foods.
Ingredients
(For 4 people)
- 500 g of fresh or frozen peas
- A bunch of chives
- 1 sprig of mountain savory
- 200 ml of milk
- 1 boiled potato
- Butter and salt to taste
Preparation
- Pour the peas in boiling salted water and let them boil until they are soft.
- Separate theand savory leaves from the stem, chop them finely. Then chop the chives as well.
- Pass the potato in the potato ricer and, when the peas are cooked to perfection, drain them and pass them through the food mill.
- Heat a saucepan with a piece of butterAdd the savory and a tablespoon of chopped chives, and let them wilt slightly. Add the pea puree, milk, and mashed potato, stirring with a wooden spoon.
- Continue Cook, stirring constantly, until the mixture becomes soft and creamy. Serve with a sprinkling of chive minced.
