ROAST RECIPE WITH BACON, ANCHOVIES, MUSTARD, AND AROMATIC HERBS
A simple roast that, thanks to the tasty sauce that accompanies it, is delicious both hot and cold. It can be prepared with equal satisfaction in any season.

ROAST WITH BACON, ANCHOVIES, MUSTARD AND AROMATIC HERBS
Ingredients
(for 6 – 8 people)
- 1 roast veal or beef tail
- 3 anchovies in salt
- 2 spoons of mustard
- 2 cloves of garlic
- 3 tablespoons white wine vinegar
- 5 spoons of extra virgin olive oil
- 1 bay leaf, 1 sprig of sage and 1 sprig of rosemary

Preparation
- In a large container to collect the anchovies rinsed, boned and chopped, the aromatic herbs, the garlic cloves, the mustard, the oil.
- Stretch the sauce obtained with half a glass of water and mix well
- Immerse the meat, turning it in the seasoning, and let it rest for about an hour.
- Drain the meat momentarily, and heat the sauce in a pan that can then hold the roast. As soon as the sauce is very hot, to merge the meat and brown it on all sides.
- Coprire and cook over moderate heat, wetting every now and then with the cooking juices.
- After 45 minutes controllare Prick the meat with a skewer: if a slightly pink or colorless liquid comes out, the roast is done. If the liquid is red, cook for another eight to ten minutes, then check again.
- If served hot, slice immediately and coat with the sauce filtered from the garlic cloves and aromatic herbs.
- If served cold, let it cool before slicing it, and serve it at room temperature, always with its filtered sauce.
Our recommendations
Consult your trusted butcher when choosing your meat: veal is tastier and more nutritious, but it's important that it's also very tender. When in doubt, choose veal.
If you opt for a hot roast, you can enrich the seasoning with two or three slices of pancetta or prosciutto crudo, cut into strips.
The cooking time is indicative because it varies depending on the size of the roast.
