CRISPY APULIA TARALLI RECIPE

Ingredients

(for about 500g of taralli)

  • 500 00 grams of flour
  • 180 ml of white wine
  • 175 ml of extra virgin olive oil
  • 10 gr of salt
  • Fennel seeds

Preparation

  • Put the flour aside, oil, and fennel seeds in a food processor. Dissolve the salt in the white wine, then pour it into the food processor and process for a few seconds. Be careful not to overwork the dough, or the taralli will become crumbly.
  • Formats a ball, place it in a bowl, cover it with cling film and let it rest for about 15 minutes.
  • After this time, cut the pasta into several pieces and then roll them out to form small cylinders, then roll them around your finger, closing the ends. You've now made your taralli.
  • Pour the taralli in boiling water with a drizzle of extra virgin olive oil and, as soon as they come to the surface, drain them.
  • Place them on a baking tray covered with baking paper and cook at 160 degrees for about 35 minutes on one side and 35 minutes on the other.
