Lentil meatloaf recipe

To make meatloaf even more delicious, lentils you can accompany it with vegan sauces, such as mayonnaise with turmeric, chickpea hummus, or other homemade dips. But let's see how to make it:
Ingredients for 4 people)
- 300g of lentils shallows
- 2 bay leaves
- 1 medium potato for the meatloaf
- 1 carrot
- 1 small onion
- 2 tablespoons of chickpea flour
- 5 tablespoons of breadcrumbs
- 1 thyme sprig
- Extra virgin olive oil
- 4 potatoes
- 1 sprig of rosemary
- Salt to taste
- Pepper as needed
- Powdered spices to taste (curry or paprika)
Preparation
- Cook the dried lentils in boiling water with the bay leaves for at least 40 minutes until they are well cooked and soft; While the lentils are on the heat, chop the carrot, onion and potato, even in a blender, and fry them for a few minutes in a pan with a spoonful of oil and a pinch of salt.
- Once the lentils are ready, drain them and place them in a large bowl. Mash them with a fork until you reach the desired consistency. You can also use a blender if you prefer a puree.
- Add the chopped sautéed vegetables, chickpea flour, and breadcrumbs to the lentils. Season with a drizzle of oil, salt, and pepper. pepper, thyme, and spices. Mix the mixture well until it becomes compact. If necessary, add a few more tablespoons of breadcrumbs.
- Once the mixture is well combined, shape the meatloaf into a loaf by hand and place it in the center of an oiled baking pan. Peel and cut the potatoes into small pieces, arrange them around the loaf, and sprinkle with salt and pepper. Drizzle the potatoes and meatloaf with oil and bake at 180°C (350°F) for about 25-30 minutes.
