EGGPLANT MEATBALL RECIPE
Vegetable patties are always a great addition to any kitchen: versatile, adaptable to your taste, a source of vitamins and minerals, and a convenient way to use up any leftovers in the fridge.
Il eggplant meatloaf, very easy to make, is made fresh, tasty and unusual thanks to the presence of the mint, delicate but unmistakable.
EGGPLANT MEATBALL
Ingredients for 4 people
- 800 grams of aubergines
- 50 grams of leftover bread
- 4 tablespoons of grated Parmesan (or other cheese) + a little
- 2 eggs
- 1 small handful of fresh mint leaves
- 1 clove of garlic
- Salt and pepper
Preparation
- Place the whole, washed aubergines on a baking tray, possibly lined with baking paper.
- Bake them in a hot oven (fan assisted, 200°) until they are perfectly soft.
- Remove them from the oven and let them cool.
- Meanwhile, prepare a mixture made with the leaves of the mint and a few garlic cloves. The garlic is optional, but you can adjust the amount to your taste.
- Grate or shred the bread.
- Cut the stems off the aubergines and peel them: you'll see that the peel will come off very easily.
- Collect the pulp in the glass of the immersion blender, add a little salt and blend until you obtain a cream.
- Transfer it to a bowl, add the breadcrumbs, cheese, chopped garlic and mint, and eggs, and mix well. Season with salt and pepper. The result should be soft and creamy; if it's too soft, add a little more breadcrumbs; if it's too soft (which would be unusual), loosen it with a few sips of milk.
- Pour the meatloaf into a ceramic baking dish and sprinkle the surface with more grated cheese. photo 8
- Bake (fan oven, 180°C) for about half an hour, or until the cheese begins to brown. Don't forget the energy-saving tips: in this case, turn off the oven a few minutes early and use the residual heat.
The eggplant meatloaf is ready, enjoy it hot or warm.
An advice
You can prepare the dough ahead of time and bake it later, but in this case, add the mint only at the last moment, otherwise it will develop a bitter flavor.
