Indian-Style Chickpeas: The Vegetarian Recipe

How to prepare Indian-style chickpeas

Ingredients

  • 200 g of chickpeas
  • 250 g of tomato sauce
  • 2 cloves of garlic
  • 2 cloves
  • 1 tsp curry powder
  • 1 tsp ground ginger
  • 1 pinch of chili powder
  • 1 pinch of coriander
  • 1 pinch of ground nutmeg
  • oil
  • salt

Preparation

  • To put Soak the chickpeas for 24 hours with a pinch of salt.
  • Throw away the soaking water and cook the chickpeas with a clove of garlic for about an hour.
  • Aside from taking a pan, put the tomato sauce with another clove of garlic and a little salt and cook over low heat. In a mortar or blender, grind the cloves, coriander, nutmeg, ginger, and chili pepper into a powder. Mix this spice mixture with the curry powder (mild).
  • Add Add the mixed herbs to the tomato sauce and continue cooking for another five minutes.
  • To drip the chickpeas and add them to the sauce, if necessary dilute the tomato with a few ladles of the cooking water from the ceci, season with salt and leave to cook for another 15-20 minutes, the time necessary for the chickpeas to absorb the flavour.
  • Finally, Season the Indian-style chickpeas with raw oil to taste.
