RICE AND CABBAGE RECIPE
A simple, authentic recipe that can help avoid a lot of kitchen waste. A classic Neapolitan dish: rice and cabbage with parmesan rinds that would otherwise end up in the garbage can. Ingredients
- 2 cups of brown rice
- 1 medium cabbage
- 1 medium onion
- 8 teacups of water
- Parmesan rinds
- Sale

Preparation
- Clean the cabbage, wash it, chop the leaves roughly.
- Sliced Add the onion and sauté it in the oil in a large pot. Before it browns, add the cabbage, season with salt, cover, and let it simmer for a few minutes.
- At this point pour Add all the water and rice to the pot, stir well, add the Parmesan rinds if you have them, bring to a boil, cover, and reduce the heat to low. Cook for about 40 minutes without stirring. Finally, if the water hasn't been completely absorbed, let it dry briefly over high heat. As with risotto, you can finish by adding a knob of butter and a little grated Parmesan.
- Let it rest Sprinkle with more Parmesan cheese 5-10 minutes before serving. Before cooking, scrape the hard part of the Parmesan rinds thoroughly and then rinse. Once cooked, if they weren't too old to begin with, they'll be soft enough to bite into and enjoy (if you like).
- In poor cuisine everything is recycledIf you want to use white rice (such as Carnaroli for risotto) instead of brown rice, the procedure changes slightly.
- Fate Stew the cabbage for a good half hour, moistening it with a few spoonfuls of hot water if it dries out too much.
- When it's almost cookedAdd half the water (i.e., 4 cups) and the rice, stir well, and cook for about 12 minutes with the lid on, without stirring. For the rest, proceed as above. In both cases, you can use broth instead of water, either vegetable or meat.
