Orgeat is an ancient drink , popular throughout the world, made with almonds and boasting refreshing properties. Healthy and with no added sugar, the orgeat recipe lends itself to many variations: here's our version made with barley, lemon, and almonds.

Orgeat with lemon

Perfect for cooling off on hot spring and summer days, thanks to the thirst-quenching properties of lemon combined with almonds, orgeat is ideal any time of day, from breakfast in the morning to an afternoon snack. Let's see how to make it:

Ingredients

  • 4 cups of barley
  • 10 cups of water
  • The juice of 2 lemons
  • 30 gr of almonds

Preparation

  • Bring to the boilIn a small saucepan, cook the water and barley for about an hour. Once cooked, strain the water.
  • Finely chop the almonds helping yourself with the barley cooking water.
  • Let the almonds soak in water with lemon juice for a whole night.
  • Filter the water again obtained and here is your refreshing orgeat ready.
  • Let it rest in the refrigerator for 20-30 minutes

Leftover almond puree can be used to make a delicious granita : just add crushed ice. Alternatively, add almond puree to smoothies or cake batter.
