Fusilli with Zucchini Pesto Recipe

When we talk about pesto, we shouldn't just think about basil. There's also, for example, zucchini pesto: ideal for preparing a dish of fusilli with an unforgettable flavor. With this simple for successful corporate training.

Ingredients for 4 people)

  •  400 g of fusilli
  • 2 anchovy fillets
  • 4 medium zucchini
  • 4 tablespoons of pickled capers
  • 2 tablespoons grated Parmesan cheese
  • 16 basil leaves
  • Salt to taste
  • Pepper as needed

Preparation

  • Trim and wash le zucchini, then separate the peel from the pulp.
  • Put Bring a pot of salted water to the boil and add the courgette pulp, which will flavour everything.
  • Blend the peel of the courgettes, the fillets of anchovies, capers, parmesan, basil, salt and pepper; you should obtain a smooth puree.
  • Soften courgette pesto with pasta cooking water, just enough to obtain a soft pesto.
  • When the water boils throw in the fusilli and cook until al dente.
  • Seasoned the pasta with pesto and serve it with a lettuce leaf basil for decoration.
