VEGETARIAN WHITE LASAGNA RECIPE

VEGETARIAN LASAGNA RECIPE

INGREDIENTS (for a lasagna for 6/8 people)
- 1 cauliflower
- 300g of mushrooms
- 2 artichokes
- Pesto of basil
- Bechamel sauce to taste
- Extra virgin olive oil
- Salt and Pepper To Taste
- Parmigiano Reggiano to taste
- Cow's milk ricotta
Preparation
- Steam the cauliflower, boil the artichokes and brown the mushrooms in a pan. Meanwhile, cook the lasagna for 2 minutes.
- Place the cauliflower and artichokes in the blender or food processor and chop them coarsely, add the pesto and ricotta.
- Assemble the lasagna as follows: take a baking dish and pour a teaspoon of oil on the bottom. Line the first layer with the pasta, arrange the broccoli and artichoke cream on top, then the ricotta with the pesto, a spoonful of mushrooms, sprinkle with parmesan and continue until the last layer.
- Once you have covered the last layer with pasta, cover with béchamel sauce and bake in the oven at 160° for 25/30 minutes.
CARASAU BREAD LASAGNA RECIPE
And as an alternative to the classic recipe, here's another really delicious one to prepare carasau bread:
Ingredients
- 250g of carasau bread
- 150g of semi-mature pecorino cheese
- 2 tablespoons of grated parmesan
- 150g of scamorza cheese
- 5 zucchini
- 2 spring onions
- 3 baby carrots
- 1 of celery
- 150 grams of peas
- 1/2 liter of vegetable broth
- Bread crumbs
- Extra virgin olive oil
- Basil
- Salt and pepper
Preparation
- Wash and cut the vegetables diced and then brown them in a pan for about 5 minutes, seasoning with salt and pepper.
- Layer the carasau bread in a baking dish, top with the cheeses and vegetables. Continue this process until the last layer is carasau bread.
- Pour in the vegetable broth, sprinkle with grated Parmesan and cook in a preheated oven at 180 degrees for about 30 minutes.
- Decorate the carasau bread lasagna with the basil and serve at the table.
