Ingredients
- 1 kg of watermelon rinds
- 400 grams of sugar
Preparation
- Using a very fine-tipped knife, separate the green part of the watermelon from the white part.
- We put the white pulp in a pan together with the sugar and cook for about 2 hours.
- We place them in previously sterilized glass jars.
Watermelon rind compote
- Preparation time: 10 minutes
- Cooking time: 1 hours

Ingredients
- 500g of watermelon rinds
- 500 grams of sugar
- 1 teaspoon cinnamon
- 100 ml of water
- 100 g of coarse salt
Preparation
- Remove the green peel from the watermelon using a thin knife.
- Soak large pieces of white watermelon pulp in a container of water and salt for 24 hours, changing the water every 6-8 hours.
- Cut the watermelon rinds into strips and dry them thoroughly.
- At that point, put 100 ml of water and the sugar to dissolve in a saucepan, pour in the strips of watermelon rind until they caramelize.
- Let them dry completely and then place them to cool on baking paper soaked in water so that they don't stick.
