Ingredients

  • 3 carrots
  • 2 potatoes
  • A broccoli
  • An egg
  • 10g butter (optional)
  • Almond flour or breadcrumbs (as needed)
  • Salt and pepper
  • 8 slices of toasted stale bread
  • Tomato and salad

Preparation

  • Cut the potatoes into small pieces, carrots and the broccoli, steam cook and as soon as the vegetables are soft enough, mash them with a fork.
  • Place the prepared vegetables in a bowl and add theegg beaten with salt and pepper and flour or breadcrumbs.
  • Knead until the mixture is fairly firm and then, using your hands or special molds, cut out 4 burgers from the mixture.
  • Place the burgers on a baking tray covered with baking paper adding a sprinkling of breadcrumbs on the surface and (according to your taste) a knob of butter.
  • Bake at 220°C for about 20 minutes.
  • Serve the burgers between two slices of toasted bread, add lettuce leaves and sliced ​​tomatoes and bring to the table.
