How to make savory vegetable muffins
I muffin salted They are an excellent, easy and quick recipe, which allows, among other things, to recover the vegetables leftovers and not to waste them. But it also has another important advantage: children like it and thus, in a natural and unforced way, it brings them closer to vegetables.
Ingredients
- 300 grams of flour
- 1 sachet of yeast for savory cakes
- 3 eggs
- 250 ml of milk
- 150 ml of extra virgin olive oil
- 100g of cheese of your choice
- 50 grams of diced cooked ham
- 1 onion
- 1 courgette
- Salt and pepper (to taste)
Method
- Pour the flour, yeast, salt, pepper and grated cheese into a bowl, and the milk, oil and eggs into another bowl.
- Mix the ingredients carefully, with the help of the children, and then combine them together in a large bowl.
- Add salt and pepper, the chopped courgette (chop it first without letting the little ones see you) and add the onion (you can optionally flavour it with a shallot), chopped very thinly (alternatively, the courgette can be replaced with any vegetable, such as yellow peppers, shelled fresh peas, carrots).
- Have your helpers pour the mixture into the moulds muffin filling them two-thirds full.
- Bake in a preheated oven at 180 degrees for 20 minutes: these appetizers should be eaten warm, accompanied by cheese or cold cuts.
