Il cous cous, the main ingredient in many delicious summer salads, requires very little cooking and preparation time and is a very versatile food, ideal for many healthy and nutritious one-pot dishes. Today we are offering you the recipe for couscous with vegetables Feta, a traditional Greek cheese.
Ingredients
- 300g of couscous
- 1 yellow or Tropea onion
- 1 yellow pepper
- 1 red pepper
- 1 eggplant
- 3 small courgettes
- 200 gr of feta
- 4 sprigs of parsley
- 4 bunches of basil
- 40 g butter
- Chilli powder
- 5 tablespoons of extra virgin olive oil
- Salt and pepper
Preparation
- Chop the onion, cut the peppers, the aubergine and the courgettes.
- Sauté the onion in a pan with two tablespoons of oil for 4 minutes, add the prepared vegetables and half of the chopped aromatic herbs, season with salt and pepper and cook for about 20 minutes, stirring occasionally with a wooden spoon.
- Bring 1,5 dl of water to a boil in a saucepan, add a pinch of salt and a tablespoon of oil, and then pour in the couscous. Remove from the heat, level with a spoon, let stand for 2 minutes, then return to the heat, stir in the butter, and cook over medium heat for 2 minutes, stirring gently. Remove from the heat, fluff the couscous with a fork, and transfer to a bowl.
- Once the vegetables are cooked, let them rest off the heat for about 5 minutes and then add them to the couscous along with the diced feta.
- Season with salt, season with oil, also add the Chili pepper and serve garnished with parsley and basil sprigs.
