How to prepare porcini mushrooms with rosemary

Ingredients
- 600g of porcini mushrooms or mixed mushrooms
- 3 tablespoons of extra virgin olive oil
- 1 clove of garlic, finely chopped
- The needles of two sprigs of rosemary, finely chopped
- 4 sage leaves, finely chopped
- Salt and black pepper
- 1 tablespoon of red wine vinegar
Preparation
- Clean the mushrooms and then cut them into slices about 1/2 cm thick.
- Heat half the oil in a large pan, add half the mushrooms and cook over high heat for about 3 minutes.
- Shake the pan, add half the garlic and the herbs and a pinch of salt and pepper and cook for another 2 minutes until the mushrooms are browned.
- Repeat with the remaining mushrooms and finish cooking the second pan with a splash of red wine vinegar. Mix with the remaining cooked mushrooms.
