How to prepare porcini mushrooms with rosemary

Ingredients

  • 600g of porcini mushrooms or mixed mushrooms
  • 3 tablespoons of extra virgin olive oil
  • 1 clove of garlic, finely chopped
  • The needles of two sprigs of rosemary, finely chopped
  • 4 sage leaves, finely chopped
  • Salt and black pepper
  • 1 tablespoon of red wine vinegar

Preparation

  • Clean the mushrooms and then cut them into slices about 1/2 cm thick.
  • Heat half the oil in a large pan, add half the mushrooms and cook over high heat for about 3 minutes.
  • Shake the pan, add half the garlic and the herbs and a pinch of salt and pepper and cook for another 2 minutes until the mushrooms are browned.
  • Repeat with the remaining mushrooms and finish cooking the second pan with a splash of red wine vinegar. Mix with the remaining cooked mushrooms.
