VEGAN PARADISE CAKE RECIPE

A very simple recipe suitable for any sweet moment of the day, to be served with its fragrance both for breakfast served with orange juice or as a snack accompanied by tea. VEGAN PARADISE CAKE

Completely free of animal products, this cake is incredibly soft and light. You can customize it by adding chocolate chips, candied fruit, and cocoa powder, or by replacing the potato starch with another starch like cornstarch. You can also use cane sugar instead of granulated sugar, making this recipe suitable for all tastes.

Ingredients

  • 125 gr flour 00
  • 125 gr potato flour
  • 150 gr sugar
  • 125 g vegetable yogurt
  • 250 ml of rice milk
  • 100 ml of sunflower seed oil
  • 1 sachet of baking powder
  • The peel of an orange
  • The zest of a lemon
  • A pinch of cinnamon
  • Icing sugar

Preparation

  • Heat the milk with the zest orange and lemon, bring to the boil and let cool
  • In a bowl, combine the flour, potato starch, sugar and yeast, add the warm milk from which you have removed the peels, the yogurt and the oil and start mixing.
  • Mix all the ingredients well with the help of a whisk and add a pinch of cinnamon.
  • Line a baking tray and pour in thedough
  • Bake at 180° for about 40 minutes
  • Before taking the cake out of the oven, test it by inserting a toothpick into several parts of the batter: if it doesn't come out dry, put the cake back in the oven for a few minutes.
  • Once the cake has cooled we can sprinkle it with icing sugar
