How to make vegan cookies

We've often talked to you about vegan cooking and how to replace animal products with plant-based ones . Today, we're sharing a recipe for delicious vegan cocoa cookies, which you can customize however you like, with chocolate chips, chopped pistachios, and flaked almonds. The recipe uses a vegan shortcrust pastry with the addition of coconut flour, which gives the dough a bold, exotic flavor.

Ingredients

  • 220 grams of flour
  • 80 g of coconut flour
  • 150 g of vegetable butter
  • 120 grams of sugar
  • 1/2 sachet of yeast
  • 20 g of cocoa
  • 20 g chopped walnuts

Preparation

  • Let it soften at room temperature butter until it becomes soft.
  • Pour the two flours, the sugar, the yeast into a bowl and add the butter.Work the dough carefully until you obtain a ball of dough and leave it to rest in the fridge for at least half an hour.
  • Once removed from the refrigerator, the dough should be divided into three: add a little cocoa to one ball, some chopped walnuts to another part and the other can be left plain.
  • At this point, dust the rolling pin and a work surface with a little flour and have fun creating the biscuits.
  • Bake at 180° for 15 minutes or depending on the heat level of your oven.

This recipe is very simple and in addition to walnuts and cocoa we can add all the ingredients we prefer: chopped pistachios , hazelnuts, raisins, chocolate chips and so on.
