How to prepare wholemeal peach tart
The tart with peaches It's a perfect dessert for breakfast or a healthy and nutritious snack, especially during the summer. This recipe, which includes a whole-wheat version of the cake, comes from Vegolosi, the online vegetarian and vegan cooking magazine.
Ingredients
- 100 ml of soy or rice milk
- About 100 ml of blended peach (about 150 g of whole peaches)
- 2 teaspoons of lemon juice
- 70 gr of brown sugar
- 40 gr almonds
- 30 ml of extra virgin olive oil
- 200 g of wholemeal flour
- 1 sachet of cream of tartar
- 1 peach for decoration
Preparation
- With a blender or immersion blender Proceed to blend the peaches, after having washed them well (if they are organic you can keep the peel).
- Add the milk and blend again until you obtain a liquid mixture.
- Don't forget to set aside a peach for the final decoration.
- After pouring the dough In a large bowl, combine the flour, sugar, and cream of tartar, then add the lemon juice and oil.
- Add the peach puree and milk to the bowl and mix vigorously until smooth.
- Chop the almonds.
- Pour carefully the mixture into 6x9 cm moulds, and decorate as desired with peach pieces and chopped almonds.
- Bake everything at 180° for about 20 minutes.
- Check for doneness with a toothpick.
- Once the cupcakes are ready, let them cool before serving.
- If you want the cakes to be golden brown, brush the surface with soy or rice milk before baking.
