The advantages are numerous: the authenticity of the dish, the savings compared to buying the packaged product, the possibility of choosing the fish from a trusted fishmonger.

Making tuna in oil at home requires just a few ingredients and a fair amount of cooking skill: you can do it even if you don't consider yourself a great chef!

Ingredients

  • 1 kg of fresh tuna in slices
  • 100 g of iodized coarse salt
  • 1 l of water
  • Extra virgin olive oil
  • Dried bay leaves
  • Juniper berries (optional)
  • Chilli (optional)

Preparation

  • The first operation to be carried out is that of to wash the tuna steaks (if necessary cut them so that they are all the same size) with water that is as cold as possible until the meat turns white.
  • Prepare the glass jars that will contain your preserve sterilizing them.
  • Place the water, salt, and bay leaf in a pot and bring to the boil.
  • Gently place the tuna in the water and let it cook, gentle fire, for about 40 minutes (an hour maximum, if the slices are quite large).
  • Once cooked, drain the tuna and then dry it thoroughly with a very clean cloth and hot (you can heat it in the microwave).
  • We also recommend that you cover up then wipe the slices with a clean cotton cloth for about 24 hours, so all the remaining liquid will be completely absorbed.
  • It's very important that the tuna is dry: this will prevent bacterial contamination or mold growth.
  • At this point, place the slices in sterilized glass jars and cover with extra virgin olive oil.
  • The tuna must be covered with at least 1 cm of oil.
  • To flavor your preserves, you can add a few juniper berries to the jars.
  • If you love spicy flavours, add a Chili pepper fresh or dry in each of the jars.
