Ingredients

  • 700g skinless tuna steak, cleaned of dark meat and cut into large pieces
  • ¼ cup finely chopped flat leaf parsley
  • 2 tablespoons fresh rosemary
  • 2 tablespoons finely chopped fresh thyme
  • 1 tablespoon grated lemon zest
  • 1 tablespoon fennel seeds
  • 1 teaspoon crushed red chili flakes
  • Salt and pepper
  • ½ cup pitted Niçoise olives
  • 3 tablespoons of capers
  • 1 spoon of white wine vinegar
  • 4 anchovy fillets
  • 5 tablespoons extra virgin olive oil, plus more for drizzling
  • 8 leaves of green leaf lettuce
  • Sliced ​​tomato
  • Red onion cut into thin slices

Preparation

  • Place the tuna in a food processor and pulse at short intervals until finely chopped.
  • Transfer the tuna to a bowl and add the parsley, rosemary, thyme, lemon zest, fennel seeds and garlic flakes. Chili pepper red; season with salt and pepper and mix thoroughly.
  • Score the surface of the dough, dividing it into 4 equal portions, and shape them into pressed meatballs of equal thickness.
  • In a food processor, puree the olives, capers, vinegar, anchovies, and 4 tablespoons of extra virgin olive oil until you obtain a tapenade.
  • In a large nonstick skillet, heat the remaining tablespoon of EVOO (one turn of the pan) over medium-high heat.
  • Cook the burgers, flipping once, for 6 minutes for medium-rare and up to 10 minutes for well-done burgers.
  • Arrange the burgers on the bun bases; garnish them by overlapping the lettuce, the tomato and the onion.
  • Spread the tops of the buns generously with olive tapenade and use them to cover the burgers.
