How to make tuna burgers
It can even improve themood. Ingredients
- 700g skinless tuna steak, cleaned of dark meat and cut into large pieces
- ¼ cup finely chopped flat leaf parsley
- 2 tablespoons fresh rosemary
- 2 tablespoons finely chopped fresh thyme
- 1 tablespoon grated lemon zest
- 1 tablespoon fennel seeds
- 1 teaspoon crushed red chili flakes
- Salt and pepper
- ½ cup pitted Niçoise olives
- 3 tablespoons of capers
- 1 spoon of white wine vinegar
- 4 anchovy fillets
- 5 tablespoons extra virgin olive oil, plus more for drizzling
- 8 leaves of green leaf lettuce
- Sliced tomato
- Red onion cut into thin slices
Preparation
- Place the tuna in a food processor and pulse at short intervals until finely chopped.
- Transfer the tuna to a bowl and add the parsley, rosemary, thyme, lemon zest, fennel seeds and garlic flakes. Chili pepper red; season with salt and pepper and mix thoroughly.
- Score the surface of the dough, dividing it into 4 equal portions, and shape them into pressed meatballs of equal thickness.
- In a food processor, puree the olives, capers, vinegar, anchovies, and 4 tablespoons of extra virgin olive oil until you obtain a tapenade.
- In a large nonstick skillet, heat the remaining tablespoon of EVOO (one turn of the pan) over medium-high heat.
- Cook the burgers, flipping once, for 6 minutes for medium-rare and up to 10 minutes for well-done burgers.
- Arrange the burgers on the bun bases; garnish them by overlapping the lettuce, the tomato and the onion.
- Spread the tops of the buns generously with olive tapenade and use them to cover the burgers.
