Spinach Pesto: A Healthy Dish That Makes Use of Leftovers

SPINACH PESTO RECIPE –

While you cook the pasta, spend the time preparing a simple, quick sauce that uses ingredients that each of us has in the fridge. Pesto spinach It has many advantages: first of all, this vegetable is able to make you fill up on health and wellness: they do not only contain Iron, which is known to most people, but also vitamins in addition to mineral salts such as Magnesium, Potassium, Phosphorus, Copper e Calcium.

HOW TO MAKE SPINACH PESTO –

Another not to be overlooked feature of this dish: it allows you to recover the leftovers that you have in the kitchen. For example, the nutsYou can use walnuts, pine nuts, almonds, or a mix of whatever you have at home, so you can use up any leftovers in your pantry. Moving on to the fridge, the same goes for the cheese: if goat cheese is the king of this dish, even distant "relatives" will do just fine, as long as they are spreadable cheeses.

SPINACH AND WALNUT PESTO RECIPE –

Put the pasta water on the stove (obviously, whole wheat pasta is better, to also get a good supply of fiber!) and take notes. Get ready to lick your lips. These proportions are needed to obtain a seasoning for 4 dishes.

Ingredients

  • fresh spinach (If you add another 50g you won't be guilty!)
  • 4-5 tablespoons of extra virgin olive oil
  • 8 - 10 nights
  • 4 - 5 dry tomatoes
  • 4 fillets of anchovies in oil
  • cheese spreadable
  • water of cooking pasta

Preparation

Blend everything raw (Important: the spinach should not be cooked!), adding the pasta cooking water to make the mixture soft and smooth. If you like a stronger flavor, you can enrich the spinach pesto by adding, in the blender, also half a clove of garlic fresh. We didn't forget to include salt in the ingredients: there's no need to add it! In just a few minutes, your pasta sauce will be ready. Try it with boiled grains (rice, spelt, barley, or oats... or even a nice mix!): it's aexcellent solution for lunch to take to the office.
