The salad of farro, a classic of vegetarian cuisine, can be a light first course, but also a side dish to accompany a second course based on fish or meat.
Here we present 5 versions of the salad farro: with olives and cheese, tomato and basil, tuna and beans, courgettes and goat cheese, prawns and avocado.

With olives and cheese
The first version of the farro salad we're offering is incredibly delicious. It combines traditional Mediterranean ingredients like olives, lettuce, and red onion (preferably Tropea, which is the highest quality) with a light, fresh cheese.
Ingredients for 4 people)
- 250g of wholemeal spelt
- 70g of cheese
- 40g pitted green olives
- 100g of radishes
- 1 red onion (preferably from Tropea)
- A few lettuce leaves
- ½ glass of vinegar
- Extra virgin olive oil (as needed)
- Basil and parsley
- Salt (to taste)
Preparation
- Soak the spelt for about 24 hours and then cook it in salted water for the time indicated on the package: it may take up to 25-30 minutes of cooking.
- Slice the onion and leave it to soak in vinegar for a few hours, then drain the onion, rinse it and dry it with kitchen paper.
- Drain the spelt, season it with oil and add a few basil leaves and parsley.
- Also add the onion, the diced cheese, the olives and the radishes cut into rounds.
- Mix until the ingredients are combined and serve.
With tomatoes and basil
Tomato and basil are a great combination to add to farro.
Ingredients
- 200 g of spelt
- 2 ripe tomatoes
- Two basil leaves
- Extra virgin olive oil
- Salt and pepper
Preparation
- Rinse the spelt under running water, then boil in salted water for the time indicated on the package.
- Drain and let cool.
- Meanwhile, dice the tomatoes and tear off the basil leaves.
- Mix the spelt with the tomatoes and basil, season with oil, salt and pepper to taste.
With tuna and beans
This version of the farro salad with tuna and beans is richer in basic ingredients, but still very easy to prepare.
Ingredients
- 200 g of spelt
- 1 can of tuna in oil
- 1 can of borlotti beans
- 1 red onion,
- Extra virgin olive oil, balsamic vinegar, salt, pepper.
Preparation
- Wash and cook the spelt as usual.
- Drain the tuna and beans
- Slice the onion finely
- Mix the spelt with the tuna, beans and onion.
- Season with oil and balsamic vinegar, salt and pepper to taste.
With courgettes and goat cheese
A more elaborate recipe than the previous ones, but very particular for its flavor.
Ingredients
- 200 g of spelt
- 2 zucchini
- 100g of goat cheese
- Extra virgin olive oil, salt, pepper.
Preparation
- After cooking and cooling the spelt, cut the courgettes into julienne strips and the goat's cheese into cubes.
- Mix the spelt with the courgettes and goat cheese.
- Season with oil and salt, and pepper to taste.
With shrimp and avocado
If you love shrimp and avocado, this combination is a must for a truly unique farro salad.
Ingredients
- 200 g of spelt
- 200g of shrimp
- 1 avocado
- Juice of one lemon
- Extra virgin olive oil, salt, pepper
Preparation
- After washing and cooking the spelt, let it cool
- Meanwhile, cook the shrimp in boiling water for 2-3 minutes, then shell them and leave them to cool.
- Cut the avocado into cubes and season with lemon juice.
- Mix the spelt with the shrimp and avocado.
- Season with oil, salt and pepper to taste.
