SOURDOUGH BREAD RECIPE
Before you begin, remember that the flour/sourdough starter ratio is one part flour to three parts starter. For example, if you use 900g of flour, you'll need 300g of starter.
Ingredients
- 300 gr of type 0 flour
- 300 g of Manitoba flour
- 200 g of sourdough starter
- 100 ml of warm water
- 1 tablespoon olive oil
- A pinch of salt
Preparation
- Start the first procedure in the evening, to allow the dough to rise all night (at least 6/8 hours).
- Sift the two flours and arrange them in a mound on a work surface. Pour in the sourdough starter, salt, water, and oil. Knead until the dough is smooth, elastic, and homogeneous.
- Place the dough in a bowl and let it rise until doubled in volume, at a temperature of about 20° (the ideal is to place the bowl in the oven with the light on or next to a radiator, if it is winter).
- As soon as thedough it will have doubled its volume, establish the shape you want to give to the bread, working it with your hands.
- Let it rise for another two hours or so and then cook in the oven at 200° for 5 minutes, then at 180° for 20 minutes and then at 160° for half an hour.
And once ready, use the bread to prepare bruschetta , to be seasoned with these delicious homemade sauces :
- Chickpea hummus
- Zucchini pesto
- Walnut sauce
- Tofu cream
- Mint sauce
- Chili sauce
- Arugula and walnut pesto
