HOMEMADE RUSKS RECIPE

Ingredients

  • 150 00 grams of flour
  • 350 g of Manitoba flour
  • 120 ml of milk
  • 150 g butter
  • 15 g of fresh brewer's yeast and 4 g of dried yeast
  • 2 medium eggs
  • 25 grams of sugar
  • 50 ml of water
  • A pinch of salt

Preparation

- Sift the flours, dissolve the yeast in the warm water and then pour it into the flour bowl. Add the two eggs, the sugar and the milk and knead until the ingredients are well combined. You can also use a stand mixer with a paddle attachment.

- Add the salt and room-temperature butter, one piece at a time, and continue kneading. If using a stand mixer, replace the paddle attachment with the dough hook. Once the dough is smooth and compact, shape it into a ball, place it in a bowl covered with plastic wrap, and let it rest in the turned-off oven for about half an hour.

- After this time, place the dough in a plumcake mould lined with baking paperLet it rise again in the oven with the light on until the dough reaches the edge of the loaf pan.

- Bake in a preheated oven at 180°C (350°F) for about 40-50 minutes. After this time, let cool and then cut into thick slices. Place them on a baking sheet and bake at about 150°C (300°F) until golden brown.

- Store the rusks in a tin box.
