How to make ricotta and orange cake

A quick and easy homemade cake, perfect for breakfast or a snack, pairs oranges with ricotta. The key is to add candied oranges alongside the fruit, which will give the cake a special flavor.

Ingredients for 4 people)

  • 250 g of white flour
  • 400 g cheese
  • 120 g butter
  • 3 eggs
  • 120 g sugar
  • 80 grams of powdered sugar
  • 1 untreated orange
  • 1 lemon not treated
  • 70 g of candied orange peel
  • A pinch of salt

Preparation

  • Place the flour in a bowl Add a pinch of salt, the softened butter cut into pieces, the powdered sugar, and an egg. Mix well (or, if you prefer, blend everything in a blender) and form a dough ball.
  • Wrap it in cling film and let it rest in the refrigerator for thirty minutes. Meanwhile, mix the ricotta with the granulated sugar and lightly beaten eggs until you obtain a smooth, even cream.
  • Add the grated citrus zest and orange peel candied fruit. Preheat oven to 180°C.
  • Butter a mold 20 cm in diameter. Roll out the dough into a disk about half a cm thick, line the pan, and prick the bottom with a fork.
  • Remove excess pasta and set it aside to form strips later.
  • Pour the ricotta mixture and arrange the pasta strips on top.
  • Bake for about 35/40 minutes, let it cool down, take it out of the oven and, once it has cooled down well, sprinkle it with a little icing sugar.
