- 4 minced garlic cloves
- ¼ cup lemon juice
- ½ cup tahini
- ½ teaspoon fine sea salt
- 1 pinch of ground cumin
- 6 spoons of water
Preparation
- Place the garlic and lemon juice in a bowl. Let it steep for 10 minutes, then sift it into another bowl and discard the garlic.
- Combine the tahini, salt, and cumin: mix well until smooth.
- Add the water, a few tablespoons at a time, until you obtain a smooth mixture of the desired consistency.

- 900 g aubergines
- 2 cloves of garlic
- 2 tablespoons of lemon juice
- 60 g of tahini
- 50 ml of extra virgin olive oil

Preparation
- Preheat the oven to 200°C and line a baking sheet with parchment paper. Halve the eggplants lengthwise and brush them with olive oil.
- Place them on a baking sheet and sprinkle with a little salt. Bake for about 35-40 minutes. Scoop out the flesh with a spoon, discarding the skin.
- Add the minced garlic and lemon juice to the well-squeezed pulp and mix well. Add the tahini and mix again.
- Finally add the oil and season with salt and pepper, parsley and cumin. To make the babaganoush without tahini you can simply omit it.

- 200 g of tahini
- 45 g of sesame seeds
- 3 eggs
- 180 g of granulated sugar
- 1 vanilla pod, (seeds scraped out)
- 190 ml of seed oil
- 240 ml of juice orange
- 280 g flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Preparation
- Mix the eggs, sugar and vanilla until you obtain a smooth and frothy mixture.
- Gradually add the oil, then add the orange juice and mix.
- Add the tahini and mix thoroughly. Add the sifted flour, baking powder, salt, and sesame seeds.
- Transfer to a buttered and floured bundt pan and bake at 180°C for approximately 50 minutes.
Biscotti

- 100 g of tahini
- 1 large egg
- 30 g of erythritol (or other sweetener)
- 50 g of dark chocolate chips
Preparation
- Preheat the oven to 180ºC. Mix the tahini, egg, and erythritol in a bowl and mix with a spoon until smooth.
- Unite the dark chocolate Drop by drop and mix. Using two spoons, place small mounds of dough on the baking sheet, leaving space between each mound.
- Cook for ten minutes, then remove from the oven and let cool.

- 800g of chicken
- 1 lemon
- tahini to taste
- water to taste
- salt and pepper
- 2 cloves of garlic
- chopped parsley
Preparation
- Mix the tahini with the lemon juice. Gradually add the water until you get a smooth consistency.
- Add the minced garlic and salt. Stir again.
- Transfer the chicken, cut into pieces, in a baking dish and cover it with the sauce adding some cumin.
- Garnish with chopped parsley and bake at 180° for 40-50 minutes.
