Celery Leaves: Recipes for Pesto and Fritters

What to do with celery leaves ? This vegetable is always in the fridge; we use it to make soups, to flavor various dishes, and even in DIY recipes like homemade vegetable stock . Celery leaves are a healthy and light raw material for preparing delicious recipes: don't waste them!

Pesto with celery leaves

Excellent for seasoning pasta or filling crostini. Try it with steamed fish. It couldn't be easier!

Ingredients for 4 people)

  • 100 g of celery leaves
  • 50 g of shelled almonds
  • 50 grams of parmesan cheese
  • a pinch of coarse salt
  • a splash of juice Lemon;
  • extra virgin olive oil to taste

Preparation

  • Place all the ingredients in a blender and blend until you obtain a creamy mixture.

Fritters with celery leaves

Delicious as an appetizer or main course: one leads to another.

  • Preparation time: 10 minutes
  • Cooking time: 15 minutes
  • Difficulty: Low

Ingredients

  • 100 g of celery leaves
  • 5 tablespoons flour
  • water needed to obtain a thick but rather liquid batter
  • 1 teaspoon salt
  • 3 spoons of parmesan
  • 2 tablespoons of pecorino cheese
  • 1 egg
  • Seed oil for frying

Preparation

  • Clean the celery leaves and chop them roughly with scissors or a knife.
  • Separately prepare the batter with the flour, water, cheeses (if you prefer more delicate flavors, use only Parmesan, 5 tablespoons in total), the egg and salt.
  • Finally, add the celery leaves.
  • Remember that for a perfect result, the celery leaves must prevail in quantity compared to the batter, which should serve more as a "glue".
  • Fry the fritters (create them by taking spoonfuls of the mixture) in boiling seed oil.
