Brown Bread Soup, a hearty recipe with rye bread

It comes from the traditional, yet unpretentious, cuisine of South Tyrol. Boil in a saucepan until the bread is completely mushy. Finally, sprinkle with chives.

BLACK BREAD SOUP RECIPE –

Do you want to try a very natural and non-wasteful recipe from South Tyrol? Get busy with the black bread soup, a truly fortifying one-dish meal prepared with stale rye bread.

INGREDIENTS

  • Half onion
  • 40 g butter
  • 120 g of rye bread
  • 1 level tablespoon of flour
  • 1 liter of boiling water
  • 1 egg yolk
  • 2 tablespoons of liquid cream
  • A sprinkling of chives

Preparation

– Mince half onion and gently sauté it in a saucepan with just 40g of butter, without browning it. Then add about 120g of stale rye bread, cut into cubes. Let the flavors infuse in the pan, stirring for a few minutes.

– Dust off Combine the bread cubes with a level tablespoon of flour and continue stirring for a few more minutes until the bread and flour begin to stick together. Then, pour a liter of boiling water into the saucepan and simmer gently until the bread is completely mashed.

– Blend with an immersion blender and taste to adjust salt and pepper. Then beat 1 egg yolk with 2 tablespoons of fresh liquid cream and, off the heat, add them to the soup boiling while stirring vigorously.

– Completed the soup with a sprinkling of chives and a couple of excellent Frankfurters, boiled and sliced: this last addition allows even children to love the recipe.
