Broad bean soup with honey

A classic, flavorful soup, but with the secret of a small addition that makes all the difference: honey. Fava bean soup can be made any time of year, even using dried fava beans (the only difference is that they need to be soaked overnight).

How to prepare broad bean soup with honey

Ingredients for 4 people)

  • 1 kilo of fresh broad beans (if it's not in season, use about 300 grams of dried or frozen broad beans)
  • 1 onion
  • 3 bay leaves
  • 1 tablespoon sunflower honey

  • Delicate extra virgin olive oil

Preparation

  • Cook Cook the broad beans in water with the bay leaves. Add salt only at the end of cooking.
  • Drain the broad beans, reserving the cooking water, and pass them through a blender or food mill.
  • Chop Peel and clean the onion and sauté it in a few tablespoons of oil, add the pureed broad beans, stirring for a few minutes to let them flavor, dilute with the cooking water and finish with honey.
  • Boil for a few minutes, then serve with a drizzle of raw extra virgin olive oil and a sprinkling of pepper.
