LENTIL SOUP RECIPE
Lentil cream soup is a very tasty, healthy, and simple dish that can be prepared both during the cold season, served hot with croutons, and during the summer, served cold with extra virgin olive oil. Ingredients for people 4
- 300g of lentils
- 1 carrot
- 1 onion
- 4 tablespoons of cooking cream
- 4 tablespoons of extra virgin olive oil
- Salt and Pepper To Taste.
- Stale bread for croutons
- Chili pepper optional
Preparation
- Soak the lentils the night before
- Pour the oil, the onion and the carrot cut into thin strips into a pan and sauté them.
- Add the lentils and pour two glasses of water
- Simmer for a couple of hours with the lid on and add water if necessary.
- Season with salt and pepper and turn off the heat.
- Add cream to obtain the desired creaminess
- To prepare the croutons, take some stale bread and cut it into cubes.
- Brown it in a pan with a drizzle of extra virgin olive oil and some chilli pepper if you like it spicy.
