SAVOURY PIE WITH MUSHROOMS RECIPE

SAVOURY PIE WITH GENOVESE MUSHROOMS
Ingredients
For pasta:
- 200 grams of flour 0 or 00
- 2 spoons of extra virgin olive oil
- 2 pinches of salt
- Water
For the stuffing:
- 800 grams of white onions
- 1 large handful of dried mushrooms
- Little milk
- 4 tablespoons of extra virgin olive oil
- 1 egg
- 1 pot of yogurt
- Grated Parmesan cheese
- salt
1 baking pan with a diameter of approximately 25 cm.
Preparation time: 1 hours
Cooking time: 45 minutes
Preparation
- knead la flour, the oil and salt with enough water to obtain a soft but very dry dough, and leave it to rest for at least half an hour.
- To put soak dried mushrooms in hot water.
- To peel the onions, wash them, slice them very thin, put them in a pan with oil and start cooking them. Salt immediately to release the cooking water, then continue cooking over very low heat, moistening as needed with a little water and a few sips of milk.
- Meanwhile rinse the mushrooms, filtration the water through a sieve lined with a sheet of kitchen paper, and use this water to continue cooking the onions.
- Chop the dried mushrooms and add them halfway through cooking.
- When the onions are transparent, very soft, almost melted, they are ready: turn off the heat, cool with the addition of yogurt, then finish with the egg and a few spoonfuls of Parmesan.
- Switch on the static oven at 200°.
- Take the dough again, divide it in two parts; using a rolling pin, roll out a first thin sheet of dough and use it to line the lightly greased baking pan.
- Fill with the compound of onions and mushrooms.
- Roll out the second sheet of pastry, still very thin, and seal the edges.
- Lightly grease the surface and bake in the oven for about 30 minutes.
- Enjoy warm.
